The analogue version uses ON/OFF control with a mercury thermometer on the top of the cabinet and natural gravity convection, giving uniformity of +/-5.0 degrees C and stability of +/-3.0 degrees C at 37 degrees C. The digital version uses microprocessor PID control with forced convection, tightening uniformity to +/-3.0 degrees C and stability to +/-1.0 degrees C at 37 degrees C, and cuts out at 4 degrees C above the set point rather than at 80 degrees C. On the digital model the mechanical 180 minute timer starts only once the set temperature has stabilised, shows END when the cycle finishes, and stores the temperature and elapsed time if the door is opened mid run.
